Recipe - Mamma Costanzo's Cricket Powder Banana Bread

Ingredients

Liquids

  • 3 bananas
  • 1/2 cup milk alternative
  • 1/4 cup maple syrup
  • 1/4 cup chia seeds
  • 1 egg
  • Juice of 1/4 of a lime
  • 1/2 cup mashed dates
  • 1 teaspoon baking powder
  • Vanilla extract

Solids

  • 2 cups gluten-free flour
  • 1/2 cup cricket powder
  • 1/2 cup dark chocolate chips
  • 1 teaspoon cinnamon
  • 1 teaspoon salt

Instructions

  1. In a bowl, mash the bananas then add the other liquid ingredients one after another and mix well. Add baking powder and let sit for 5 minutes.
  2. Preheat the oven to 350F.
  3. Mix all the solid ingredients together.
  4. Incorporate the solid ingredients into the liquid ingredients whilst mixing well.
  5. Poor the mix into an oiled cake pan.
  6. Cook for 30-40 minutes.
